Pan seared beef belly, confit (cooked in its own fat) for 12 hours to retain that juicy umami beef taste. Served with our Idaho potato puree and fresh vegetables of green beans, sweet corn and charred onions.

Au Poivre Sauce
3 kinds of dried peppers mixed and reduced the natural beef jus and reduced with our organic cream for that rich and spicy sauce that adds an extra layer of flavor for our slow cooked beef.
Truffle Au Jus
2 kinds of mushrooms slow roasted and seasoned with our selected herb blend, reduced with our organic cream and finished with our white truffle blend.
